Lots of recipes these days seem to call for panko breadcrumbs. Is this a special type of bread? What do they taste like and can I substitute ordinary breadcrumbs? I’ve got a husband who gets a bit nervous if the ingredients in his dinner sound at all exotic or “foreign”!

Well, he doesn’t need to be nervous about you using these. Panko is the Japanese word for breadcrumbs – simple as that. Having said that, they are grated in a different style from our local breadcrumbs – panko-style is almost flaked rather than crumbed and they make gorgeous crisp toppings.
