Method
Zucchini fritters
1.Sift the flour and baking powder together into a large mixing bowl. Stir in the remaining ingredients until well combined and season to taste.
2.Heat olive oil in a large frypan on medium. Drop teaspoonfuls of the mixture in 4 batches into hot oil and cook for 1-2 minutes each side, until golden. Drain on paper towel.
Spicy roasted capsicum salsa
3.Combine all ingredients in a small bowl and season to taste.
4.Place a small dollop of yoghurt on each fritter, then top with a little salsa. Serve immediately.
Note
- Prepare your own roasted capsicum by baking in a moderate oven at 180°C for about 20 minutes until the skin is charred. Cool, then remove skin and seeds.
