Zucchini and mint couscous salad
- 1/2 cup couscous (or wholegrain couscous)
- 1/2 cup boiling water
- 2 zucchini
- 1/2 cup fresh mint leaves
- 1/4 cup crumbled reduced-fat feta
- 1 tablespoon olive oil
- 2 teaspoon finely grated lemon rind
- 2 teaspoon lemon juice
Method
Zucchini and mint couscous salad
- 1Combine couscous and boiling water in a medium bowl; cover, stand for 5 minutes, fluff with a fork occasionally. Thickly slice zucchini; cook on a heated oiled grill plate (or grill or barbecue) for 2 minutes each side or until tender and browned.
- 2Combine zucchini, couscous, fresh mint leaves, crumbled feta, olive oil and lemon rind and lemon juice.
