Workmen’s savoury vegetarian muffins

Nici Wickes' shares her mum's tried-and-true workmen's muffins recipe. These muffins aren’t your usual light and fruity ones – they’re solid and filling with veges, feta and a hint of curry powder

Ingredients

Method

1.Set oven to fan bake at 175°C. Grease a regular 12-hole muffin tin.
2.Sift the dry ingredients into a bowl. Whisk oil, yoghurt and eggs together, then add to the dry ingredients. Add the feta, chopped veges, herbs and the seasoning. Mix to just combine.
3.Drop spoonfuls into the muffin tins, sprinkle with the grated cheese and bake for approximately 12-15 minutes until springy to touch and a skewer inserted comes out clean.
4.Cool. Remove from the tin, wrap in a tea towel and deliver to the workmen. They will appreciate it, I promise!
  • Seasons may dictate what you put in these – sweetcorn kernels, grated courgette, frozen peas, other herbs, a tablespoon of chutney, or whatever. Get creative! – Here’s what Mum says about these muffins: “Spare a thought for the workmen outside your house repairing or fixing something. These muffins aren’t your usual light and fruity ones – they’re more solid and filling. I can assure you they are appreciated, particularly on cold, wet, miserable days.” I love my Mum’s generosity!
