Wholemeal kiwifruit muffins

Kiwifruit stars in these wholemeal muffins that are packed with goodness and so easy to make. Everything is mixed by hand in a bowl and the muffins will be in the oven in just 15 minutes!

Method

1.Preheat oven to 200°C (180°C fan-forced). Line a 12-hole, 1/3-cup muffin pan with paper patty cases.
2.Cut three kiwifruit into four slices each. Coarsely chop remaining two. Combine dry ingredients in a large bowl. Make a well in centre and add combined milk, butter, egg and chopped kiwifruit. Stir gently with a fork until mixture is just combined.
3.Spoon into paper cases and top each muffin with a slice of kiwifruit. Bake for 20 minutes, brush with a little warmed apricot jam and bake for a further 5 minutes or until muffins spring back when touched. Cool on a wire rack.
