Wholemeal kiwifruit muffins

Kiwifruit stars in these wholemeal muffins that are packed with goodness and so easy to make. Everything is mixed by hand in a bowl and the muffins will be in the oven in just 15 minutes!

Wholemeal kiwifruit muffins
  • 5 kiwifruit, peeled
  • 1 cup (150g) self-raising flour, sifted
  • 3/4 cup (120g) wholemeal self-raising flour, sifted
  • 1/4 cup (55g) caster sugar
  • 1 teaspoon baking powder
  • 3/4 cup (180ml) milk
  • 75 gram butter, melted
  • 1 egg, lightly beaten
  • apricot jam, warmed, to glaze

    Preheat oven to 200°C (180°C fan-forced). Line a 12-hole, 1/3-cup muffin pan with paper patty cases.

    Cut three kiwifruit into four slices each. Coarsely chop remaining two. Combine dry ingredients in a large bowl. Make a well in centre and add combined milk, butter, egg and chopped kiwifruit. Stir gently with a fork until mixture is just combined.

    Spoon into paper cases and top each muffin with a slice of kiwifruit. Bake for 20 minutes, brush with a little warmed apricot jam and bake for a further 5 minutes or until muffins spring back when touched. Cool on a wire rack.
