Wholemeal fruit and seed damper
  • 1 1/2 cup wholemeal self-raising flour
  • 1 1/2 cup self-raising flour
  • 40 gram butter, chopped
  • 1/4 cup caster sugar
  • 1/4 cup chopped dried apricots
  • 1/2 cup sultanas
  • 1/2 cup seed mix, plus 2 tablespoons extra, to sprinkle
  • 1 tablespoon poppy seeds, plus 1/2 teaspoon extra, to sprinkle
  • 2/3 cup low-fat natural yoghurt
  • 1 cup freshly squeezed orange juice, approximately

    Preheat oven to 200°C/180°C fan forced. Grease a large baking tray.

    Sift wholemeal flour and self-raising flour into a large bowl; return husks to bowl. Using fingertips, rub in butter. Stir in sugar fruit, 1/2 cup seed mix and 1 tablespoon poppy seeds. Make a well at centre. Using a round-bladed knife, stir in yoghurt and enough juice to make a soft sticky dough.

    Turn out dough onto a lightly floured surface; knead briefly until combined (dough should be soft and sticky). Divide dough into 8 equal pieces; shape into rounds. Place rounds on prepared tray, 5cm apart. Brush tops with a little water. Sprinkle with extra seed mix and poppy seeds.

    Bake for 20 minutes or until golden and dampers sound hollow when tapped. Remove from oven. Serve.
