Wholemeal fruit and seed damper
- 1 1/2 cup wholemeal self-raising flour
- 1 1/2 cup self-raising flour
- 40 gram butter, chopped
- 1/4 cup caster sugar
- 1/4 cup chopped dried apricots
- 1/2 cup sultanas
- 1/2 cup seed mix, plus 2 tablespoons extra, to sprinkle
- 1 tablespoon poppy seeds, plus 1/2 teaspoon extra, to sprinkle
- 2/3 cup low-fat natural yoghurt
- 1 cup freshly squeezed orange juice, approximately
Method
Wholemeal fruit and seed damper
- 1Preheat oven to 200°C/180°C fan forced. Grease a large baking tray.
- 2Sift wholemeal flour and self-raising flour into a large bowl; return husks to bowl. Using fingertips, rub in butter. Stir in sugar fruit, 1/2 cup seed mix and 1 tablespoon poppy seeds. Make a well at centre. Using a round-bladed knife, stir in yoghurt and enough juice to make a soft sticky dough.
- 3Turn out dough onto a lightly floured surface; knead briefly until combined (dough should be soft and sticky). Divide dough into 8 equal pieces; shape into rounds. Place rounds on prepared tray, 5cm apart. Brush tops with a little water. Sprinkle with extra seed mix and poppy seeds.
- 4Bake for 20 minutes or until golden and dampers sound hollow when tapped. Remove from oven. Serve.
