Whitebait and potato frittatas

Branch out from the usual whitebait fritters with this whitebait frittata recipe. It's a perfect light meal when served with a fresh salad and creamy lemon mayo

Method

1.Preheat oven to 180°C fan bake.
2.Peel and cut potato into small cubes. Place cubes into a saucepan and cover with cold water. Bring to the boil, then simmer for about 5 minutes until potato is just tender. Drain and set aside to cool.
3.Prepare muffin tins by greasing with butter or spraying with oil.
4.Break eggs into a bowl, then add in cream, whisking together. Season with salt and pepper to taste.
5.Ensure whitebait is well drained. Mix potato cubes and whitebait in a bowl, then divide mixture into muffin tins.
6.Pour over egg mixture, then place in oven and cook for 20 minutes or until frittata is set. Halve the cook time if making the frittatas in mini muffin tins.
7.Serve frittatas with a side salad and lemon wedges, plus lemon mayo if liked.
  • Lemon mayo: Mix together 1/2 cup of mayonnaise with the juice and rind of 1 lemon, then season to taste.
