White christmas rocky road
  • 375 gram white chocolate melts
  • 150 gram white marshmallows
  • 80 gram pink turkish delight
  • 2/3 cup (100g) dried cranberries
  • 1/3 cup (50g) shelled pistachios, toasted
  • 1/3 cup (50g) macadamias, toasted, chopped

Method

    Grease and line base and sides of a 4cm-deep, 29cm x 19cm slice pan. Ensure baking paper extends 2cm above rim of long sides of pan.

    Place chocolate in a microwave-safe bowl. Microwave at 100% for 1-2 mins, stirring with a metal spoon every 1 min, until smooth.

    Using scissors, cut marshmallows and turkish delight into small pieces. Place in a bowl with cranberries, pistachios and macadamia.

    Pour melted chocolate over marshmallow mixture and stir to coat. Spoon into prepared pan. Chill for 30 mins, until set.

    Turn out onto a chopping board and remove baking paper. Cut into 24 pieces.
