White chocolate eggnog

Creamy, sweet and right at home in front of a crackling fire, eggnog is a true winter drink. This eggnog recipe is given a warming kick with rum and brandy essence

  • 2 eggs, lightly beaten
  • 2 tablespoon caster sugar
  • 1 1/2 cup milk
  • 1 teaspoon rum essence
  • 1 teaspoon brandy essence
  • 70 gram white chocolate, finely chopped
  • chocolate wafer sticks, to garnish

    Place the egg, sugar and milk in a small saucepan. Stir constantly on medium heat for 6 minutes until mixture is thick enough to coat the back of a wooden spoon.

    Remove from heat. Add the essences and white chocolate. Stir until smooth. Serve with a wafer stick.
