Method
1.Preheat oven to moderate, 180°C. Lightly grease 6 x ¾-cup microwave-safe ramekins.
2.In a small, microwave-safe bowl, combine half the jersey caramels and cream. Microwave for 3-4 minutes on medium (70%), stirring every minute, until caramels have melted and mixture is smooth. Stir in salt and keep warm.
3.In a large bowl, combine flour and sugar. Stir in combined milk, egg and butter. Fold in remaining caramels, white chocolate and nuts.
4.Spoon mixture into the ramekins, only filling halfway to allow room to rise.
5.Microwave puddings two at a time on medium (50%) for 2-2½ minutes. Serve drizzled with salted caramel sauce.
Note
- These puddings are best eaten when still warm, while the caramel is oozy and melted.
