White bean salad

Ingredients

White bean salad
  • 800 gram drained rinsed canned white beans
  • 1 (200g) red capsicum, thinly sliced
  • 1 (80g) white onion, thinly sliced
  • 1 cup finely shredded fresh flat-parsley leaves
  • 1/2 cup (90g) thinly sliced cornichons
  • 1 tablespoon drained rinsed baby capers
  • 2 tablespoon olive oil
  • 1/4 cup red wine vinegar

Method

White bean salad

    Place white beans, red capsicum, onion, flat-parsley leaves, cornichons, baby capers, olive oil and red wine vinegar in medium bowl; toss gently to combine.

    Season to taste. Stand at room temperature at least 1 hour before serving.

Notes

You can use any cooked white beans such as cannellini, butter and haricot for this recipe.
