Ingredients

Method

1.Place white beans, red capsicum, onion, flat-parsley leaves, cornichons, baby capers, olive oil and red wine vinegar in medium bowl; toss gently to combine.
2.Season to taste. Stand at room temperature at least 1 hour before serving.

You can use any cooked white beans such as cannellini, butter and haricot for this recipe.
