White bean salad
A healthy, fast and easy white bean salad from Australian Women's Weekly.

Ingredients
White bean salad
- 800 gram drained rinsed canned white beans
- 1 (200g) red capsicum, thinly sliced
- 1 (80g) white onion, thinly sliced
- 1 cup finely shredded fresh flat-parsley leaves
- 1/2 cup (90g) thinly sliced cornichons
- 1 tablespoon drained rinsed baby capers
- 2 tablespoon olive oil
- 1/4 cup red wine vinegar
Method
White bean salad
- 1Place white beans, red capsicum, onion, flat-parsley leaves, cornichons, baby capers, olive oil and red wine vinegar in medium bowl; toss gently to combine.
- 2Season to taste. Stand at room temperature at least 1 hour before serving.
Notes
You can use any cooked white beans such as cannellini, butter and haricot for this recipe.
