Method

1.Preheat oven to 220°C (200°C fan-forced). Line a large oven tray with baking paper.
2.In a bowl, toss potatoes in half the oil. Arrange on tray and sprinkle with 2 teaspoons spice mix. Bake for about 35-40 minutes, turning halfway, or until golden.
3.Meanwhile, heat remaining oil in a medium-sized frying pan on medium heat. Cook onion and capsicum for about 4-5 minutes, or until tender. Brown mince for about 4-5 minutes, using a wooden spoon to break up lumps. Stir in remaining spice mix and cook, stirring, for about 1 minute.
4.Stir in tomatoes and beans. Bring to the boil. Reduce heat to medium. Simmer for about 8-10 minutes, or until sauce thickens.
5.Sprinkle cheese over wedges. Bake for a further 4-5 minutes, or until cheese melts.
6.Meanwhile, to make guacamole: In a small bowl, mash avocado and coriander with lemon juice and season to taste. Mix tomato through.
7.Divide wedges among bowls. Spoon beef mixture over. Serve topped with guacamole, sour cream and a few drops of Tabasco.
