Method
1.Cut each slice of prosciutto in half lengthways so you have 20 lengths.
2.Remove melon rind and seeds. Slice melon into 4cm long x 2cm square rectangles. Top melon with a small piece of sliced feta and a mint leaf.
3.Wrap a length of prosciutto around each portion and arrange wraps on a platter. Insert a toothpick into each parcel to secure. Chill until ready to serve.
Note
- Any kind of melon works for these wraps – try rock or honeydew for a change.
