Method

Watermelon & lime oysters

1.In a small bowl, combine watermelon, cucumber and shallot.
2.Top each oyster with half a teaspoon of the watermelon mixture. Squeeze lime juice over, then serve straight away with a good grinding of black pepper.

To store oysters, cover with a piece of damp paper towel and cling film, keeping in the fridge for no more than a day.
