Watermelon and lime oysters

Enjoy this sweet/salty take on oysters with a fresh watermelon salsa topping. It's summer in a shell!

Watermelon & lime oysters
  • 1/4 cup watermelon, finely chopped
  • 1/4 lebanese cucumber, seeded, chopped
  • 1/2 shallot, finely chopped
  • 6 oysters, shucked
  • 1/2 lime
  • black pepper to serve

    In a small bowl, combine watermelon, cucumber and shallot.

    Top each oyster with half a teaspoon of the watermelon mixture. Squeeze lime juice over, then serve straight away with a good grinding of black pepper.


To store oysters, cover with a piece of damp paper towel and cling film, keeping in the fridge for no more than a day.
