Warm pork and mandarin salad with honey dressing

The sweet citrus flavours of the mandarin are a wonderful contract to the richness of the pork in this fresh, crisp salad.

Ingredients

Warm pork and mandarin salad with honey dressing
  • 600 gram pork fillet
  • 2 medium_piece (400g) mandarins, peeled
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 1 fresh long red chilli, chopped finely
  • 2 medium_piece (400g) radicchio, trimmed
  • 1 cup (50g) snow pea sprouts
  • 3/4 cup (115g) roasted unsalted cashews

    Cook pork, uncovered, in heated oiled large frying pan until cooked as desired. Cover pork; stand 5 minutes then slice thickly.

    Meanwhile, segment mandarins into large bowl. Stir in combined oil, honey and chilli. Add pork, radicchio, sprouts and nuts; toss gently to combine. Serve salad warm.
