Warm pasta, salmon and asparagus salad

Ingredients

Dressing
  • 1 tablespoon olive oil
  • 2 lemons, juice, zest
  • 1 long red chilli, seeded, finely chopped
  • 2 clove garlic, crushed
Warm pasta, salmon and asparagus
  • 250 gram dried pasta curls
  • 1 bunch asparagus, trimmed, chopped
  • 1 cup frozen peas
  • 250 gram snow peas, trimmed, halved
  • 1 tablespoon water
  • 180 gram flaked hot smoked salmon
  • 1/4 cup parsley, chopped
  • 50 gram low-fat ricotta

Method

Warm pasta, salmon and asparagus

    In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain well and return to pan.

    Meanwhile, place asparagus and all peas in a microwave- safe bowl with water. Cover with plastic wrap. Microwave on high (100%) for 1-1 1/2 minutes, until just tender. Drain well.

    DRESSING: In a small jug, whisk all ingredients together.
  • 4
    Add vegetables to pasta with salmon, dressing and parsley. Crumble over ricotta to serve.
