Warm pasta, salmon and asparagus salad
This light, flavourful pasta, salmon and asparagus salad recipe is a perfect fuss-free lunch or dinner. Featuring lemony dressing, creamy ricotta and vibrant peas, this dish is sure to hit the spot

Ingredients
Dressing
- 1 tablespoon olive oil
- 2 lemons, juice, zest
- 1 long red chilli, seeded, finely chopped
- 2 clove garlic, crushed
Warm pasta, salmon and asparagus
- 250 gram dried pasta curls
- 1 bunch asparagus, trimmed, chopped
- 1 cup frozen peas
- 250 gram snow peas, trimmed, halved
- 1 tablespoon water
- 180 gram flaked hot smoked salmon
- 1/4 cup parsley, chopped
- 50 gram low-fat ricotta
Method
Warm pasta, salmon and asparagus
- 1In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain well and return to pan.
- 2Meanwhile, place asparagus and all peas in a microwave- safe bowl with water. Cover with plastic wrap. Microwave on high (100%) for 1-1 1/2 minutes, until just tender. Drain well.
- 3DRESSING: In a small jug, whisk all ingredients together.
- 4Add vegetables to pasta with salmon, dressing and parsley. Crumble over ricotta to serve.
