Warm Brussels sprout and leek salad

Ingredients

  • 500 gram Brussels sprouts
  • 1 medium-sized red onion, finely sliced
  • 1 large leek, finely sliced
  • 1 tablespoon olive oil
  • 50 gram feta
  • 1/4 cup sliced almonds

Method

    Bring a large pot of salted water to the boil. Plunge the Brussels sprouts in the water and cook for 3 minutes. Drain and set aside to cool slightly.

    Trim the bottoms off the sprouts and cut in half.

    Heat a frypan and add oil. Cook onion and leek until soft.

    Add the Brussels sprouts and toss until slightly coloured.

    Pour the Brussels sprouts mixture onto a serving platter, crumble over feta and top with sliced almonds.
