Ingredients

125 gram unsalted butter, melted, cooled

1 egg

2 golden delicious apples, peeled, cut into 1cm cubes

1 cup (220g) caster sugar

1 1/2 cup (225g) plain flour

1 teaspoon bicarbonate of soda (baking soda)

1 teaspoon ground cinnamon

1 cup (115g) chopped pecans

cream, to serve

Method

1.Preheat oven to 180°C. Grease and line base of a 20cm springform pan.

2.Whisk butter and egg until smooth. Add apple and sugar. Sift dry ingredients and a pinch of salt over apple mixture. Add nuts, mix well.

3.Fill prepared pan and bake for 45-55 minutes, until a skewer inserted comes out clean. Serve warm or at room temperature with cream.
