Warm apple cake with pecans

Warm apple cake with pecans
  • 125 gram unsalted butter, melted, cooled
  • 1 egg
  • 2 golden delicious apples, peeled, cut into 1cm cubes
  • 1 cup (220g) caster sugar
  • 1 1/2 cup (225g) plain flour
  • 1 teaspoon bicarbonate of soda (baking soda)
  • 1 teaspoon ground cinnamon
  • 1 cup (115g) chopped pecans
  • cream, to serve

    Preheat oven to 180°C. Grease and line base of a 20cm springform pan.

    Whisk butter and egg until smooth. Add apple and sugar. Sift dry ingredients and a pinch of salt over apple mixture. Add nuts, mix well.

    Fill prepared pan and bake for 45-55 minutes, until a skewer inserted comes out clean. Serve warm or at room temperature with cream.
