Ingredients

Waldorf salad
  • 3 celery sticks, cut into 1cm pieces
  • 1 medium red apple, thinly sliced
  • 1 medium green apple, thinly sliced
  • 1 baby cos lettuce, cut into 3cm lengths
  • 100 gram jarlsberg cheese, finely chopped
  • 2/3 cup walnuts, coarsely chopped, toasted
  • 1/2 cup low-fat natural yoghurt
  • 2 tablespoon egg mayonnaise
  • 2 tablespoon lemon juice
  • 2 tablespoon finely chopped chives
  • 8 medium slices sourdough bread, toasted

Method

  • 1
    Place celery, apple, lettuce, cheese and walnuts in a large bowl. Toss to combine.

    Combine yoghurt, mayonnaise, juice and chives in a small bowl. Whisk to combine. Season.

    Pour dressing over salad. Toss to lightly coat lettuce. Serve with toast.
