Ingredients
Vindaloo barbecued corn
- 2 tablespoon vindaloo curry paste
- 30 gram butter, melted
- 6 corn cobs (in husk if possible)
- 1 lime (optional), cut into 6 wedges
Method
Vindaloo barbecued corn
- 1Preheat a barbecue plate or chargrill to medium-high.
- 2In a small bowl, combine curry paste and butter. Peel back husks from corn, then remove and discard silk.
- 3Brush kernels with butter mixture. Replace husks to enclose corn. Tie wet kitchen string around each husk to hold in place. If corn cobs have no husks, wrap in foil to cook.
- 4Cook on barbecue for 15-20 minutes, turning regularly to cook evenly. Remove from heat, remove husks. Serve corn cobs with lime wedges, if desired.
