Vegetarian burger

A wonderfully grown-up version of fast-food, and healthy for the whole family.

Ingredients

Vegetarian burger
  • 400 gram can chickpeas, drained and rinsed
  • 2 clove garlic, roughly chopped
  • 1 egg
  • 1 tablespoon pesto
  • 1 teaspoon dried oregano
  • 1/4 cup grated parmesan cheese
  • 1/2 cup fresh breadcrumbs
  • salt and freshly ground black pepper
  • 3 spring onions, finely sliced
  • 1 tablespoon flour
  • 3 tablespoon oil
  • 4 panini
  • salad ingredients, to serve

Method

Vegetarian burger
  • 1
    Place chickpeas and garlic in the bowl of a food processor. Pulse until finely chopped.

    Add egg, pesto, oregano, parmesan and breadcrumbs, pulse until well combined. Season and mix in spring onions.

    Form mixture into patties and dust with flour.
  • 4
    Heat oil in a frying pan and cook patties until golden and crisp on both sides.
  • 5
    Slice panini in half and toast, serve with patties and salad.
