Vegetarian burger

Ingredients
Vegetarian burger
- 400 gram can chickpeas, drained and rinsed
- 2 clove garlic, roughly chopped
- 1 egg
- 1 tablespoon pesto
- 1 teaspoon dried oregano
- 1/4 cup grated parmesan cheese
- 1/2 cup fresh breadcrumbs
- salt and freshly ground black pepper
- 3 spring onions, finely sliced
- 1 tablespoon flour
- 3 tablespoon oil
- 4 panini
- salad ingredients, to serve
Method
Vegetarian burger
- 1Place chickpeas and garlic in the bowl of a food processor. Pulse until finely chopped.
- 2Add egg, pesto, oregano, parmesan and breadcrumbs, pulse until well combined. Season and mix in spring onions.
- 3Form mixture into patties and dust with flour.
- 4Heat oil in a frying pan and cook patties until golden and crisp on both sides.
- 5Slice panini in half and toast, serve with patties and salad.
