Vegemite and cheese scrolls
  • 3 cup self-raising flour
  • 60 gram butter, chopped
  • 1 1/2 cup milk
  • 2 tablespoon vegemite
  • 1 teaspoon just-boiled water
  • 1 cup grated tasty cheese

    Preheat oven to hot, 200°C. Line a baking tray with baking paper.

    Sift flour into a large bowl. Using fingertips, rub in butter until mixture resembles fine breadcrumbs.

    Make a well in centre of flour mixture. Add milk; stir with a palette knife until well combined. Turn dough onto a lightly floured surface; knead gently. Roll or press out to a 1cm-thick rectangle.

    In a small bowl, combine Vegemite and water. Spread over dough; top with cheese. Roll up dough lengthways.

    Cut dough into 12 rounds. Place on prepared tray, seam sides together. Spray with olive oil.

    Bake 15-20 minutes, until crisp and browned. Transfer to a wire rack to cool completely.
