Method
1.Transfer ice cream to a large bowl. Set aside for 10-15 minutes until softened.
2.Fold fruit mince through ice cream, then spoon back into the tub, smoothing the top. Freeze for 3-4 hours until firm.
3.Serve in scoops with fresh raspberries or other berries of your choice.
4.Try these variations: Add 1 tablespoon liqueur. Add ½ cup chopped glacé fruit. Sprinkle with grated chocolate.
Note
- Substitute fruit mince for fruit cake or pudding, or use mini apple pies with 1 teaspoon ground cinnamon.
