Tuscan chicken
This rustic Tuscan chicken dish is bursting with flavour and yet it takes less than 30 minutes to cook.

Ingredients
Tuscan chicken
- 2 punnet (400g) grape tomatoes
- 3/4 cup (110g) pimento-stuffed green olives
- 1/4 cup (60ml) olive oil
- juice of 1 lemon
- 4 chicken breast fillets, cut into 3 pieces
- basil leaves and rice, to serve
Method
Tuscan chicken
- 1Preheat oven to 180°C. In a bowl, combine tomatoes, olives, 2 tablespoons oil and lemon juice.
- 2Heat remaining oil in a frying pan. Season chicken to taste and fry for 2-3 minutes each side or until golden. Transfer to a baking pan.
- 3Pour tomato mixture over chicken, toss well and season to taste. Bake for 15-20 minutes, turning once, until chicken is cooked through. Top with basil leaves and serve with rice.
Notes
If desired, add 1 tablespoon capers to tomato mixture. Instead of frying, simply toss chicken with other ingredients and bake until cooked through.
