Turkish chicken couscous

This light Turkish meal takes just 15 minutes to create and is filled with delicious flavours such as spicy harissa, pomegranate, apricots and tender chicken.

Ingredients

Turkish chicken couscous
  • 1 cup couscous
  • 1/3 cup coriander, plus extra leaves to serve, chopped
  • 2 tablespoon olive oil
  • 1 tablespoon preserved lemon, chopped
  • 1/2 barbecued chicken, meat shredded
  • 1 small red onion, sliced
  • 1/3 cup dried apricots, chopped
  • 1/4 cup toasted flaked almonds
  • 1/2 pomegranate, seeds removed
  • 2 teaspoon harissa
  • 3/4 cup greek yoghurt

Method

  • 1
    Prepare couscous following packet instructions. Fluff with a fork and cool.

    In a large bowl, combine couscous, coriander, oil and lemon. Mix well and season to taste.

    Add chicken, onion, apricot, almonds and seeds.Toss well.
  • 4
    In a small serving bowl, swirl harissa through yoghurt. Serve couscous topped with extra coriander. Accompany with yoghurt.

Notes

You could use cooked brown rice or cooked barley in place of couscous.
