Method
1.Prepare couscous following packet instructions. Fluff with a fork and cool.
2.In a large bowl, combine couscous, coriander, oil and lemon. Mix well and season to taste.
3.Add chicken, onion, apricot, almonds and seeds.Toss well.
4.In a small serving bowl, swirl harissa through yoghurt. Serve couscous topped with extra coriander. Accompany with yoghurt.
You could use cooked brown rice or cooked barley in place of couscous.
