Turkey wrap with cranberry mayonnaise

This delicious turkey wrap is perfect for lunch, a light dinner or when you have leftover Christmas turkey to eat your way through.

Ingredients

Method

1.Place mountain bread on a board. In a small bowl, combine mayonnaise with cranberry sauce.
2.Spread over one long edge of bread. Top with turkey, cucumber ribbons and baby rocket.
3.Roll up tightly and cut in halves. Wrap in plastic wrap and chill until required.

This is best assembled just before serving. Use a vegetable peeler to make cucumber ribbons.
