Turkey schnitzel baguette

This turkey schnitzel baguette recipe is packed with all the ingredients that make a great sandwich - bacon, eggs, mayo, and of course, crispy schnitzel!

1.In a large frying pan, heat the oil on medium heat. Cook the schnitzel for 3-5 minutes, turning once, until cooked through. Drain on a paper towel. Keep warm.
2.In the same pan, fry the bacon for 1-2 minutes each side until crisp. Drain on a paper towel.
3.Crack the eggs into the pan and fry for 2-3 minutes until cooked to taste.
4.Spread the baguettes with the mayonnaise. Top the bottom half with the rocket and tomato.
5.Slice the schnitzel and place on the tomato. Finish with the bacon, egg and top half of the baguette. Serve with chips.
  • To make your own schnitzel, cover turkey steaks with plastic wrap and pound with a rolling pin to flatten. Dust in seasoned flour, dip into beaten egg and press into breadcrumbs. Chill for 15 minutes before cooking.
