Turkey, brie and cranberry rissoles
There's a hidden surprise inside these turkey rissoles - a cheesy filling of brie, ham and cranberry! Serve these rissoles with a crisp green salad for an easy midweek meal.

Ingredients
Filling
- 90 gram brie cheese, finely chopped
- 50 gram sliced ham, finely chopped
- 2 tablespoon cranberry sauce
Turkey rissoles
- 500 gram turkey mince
- 1/2 cup fresh breadcrumbs
- 1 onion, finely chopped
- 2 tablespoon chopped parsley
- 1 egg, lightly beaten
- 2 clove garlic, crushed
- 2 tablespoon oil
- salad, to serve
Method
Turkey, brie and cranberry rissoles
- 1In a bowl, combine mince, breadcrumbs, onion, parsley, egg and garlic. Season to taste and shape into 8 patties.
- 2To make filling: combine all ingredients in a small bowl. Chill until required.
- 3Make a hole in centre of each patty. Spoon a teaspoon of filling into each hole. Re-shape patties to enclose filling. Chill 10 minutes. Preheat oven to 180°C.
- 4Heat oil in a large frying pan on medium. Cook patties, in 2 batches, 2-3 minutes each side until golden brown. Transfer to a baking tray. Bake 8-10 minutes until cooked through. Drain on a paper towel. Serve with salad.
