Ingredients

Tuna tabbouleh
  • 1/4 cup (50g) couscous
  • 1/4 cup (60ml) boiling water
  • 185 gram can tuna in spring water, drained, flaked
  • 1/2 cup finely chopped fresh flat-leaf parsley
  • 3 tomatoes, seeded, chopped finely
  • 3 green onions, sliced thinly
  • 1/4 cup (60ml) lemon juice
  • 1 clove garlic, crushed

Method

    Combine couscous with the water in medium heatproof bowl, cover; stand 5 minutes or until water is absorbed.
