Tuna patties with mash

These tasty savoury tuna patties are perfect for a quick weeknight dinner for the family. Serve with mashed potato and salad for a complete meal in no time at all.

1.Combine tuna, breadcrumbs, onion, basil and egg in a bowl. Season. Using damp hands, shape mixture into 12 patties. Chill until required.
2.Meanwhile, place potato in a large saucepan; cover with cold water. Bring to the boil. Boil for 10 minutes or until tender. Drain. Return to pan. Place over low heat. Add cream; mash until almost smooth. Season. Keep warm.
3.Lightly coat patties in flour. Heat oil in a deep heavy-based frying pan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Shallow-fry patties, in batches, for 1 minute each side or until golden and cooked. Using a slotted spoon, transfer to paper towels. Serve patties with mash and salad.

You’ll need 4 slices of day-old white bread to make 2 cups breadcrumbs.
