1 cup penne or other pasta shape

185 gram can tuna, drained

1/2 cup cherry tomatoes, halved

1/2 Lebanese cucumber, cut into chunks

2 hard-boiled eggs, quartered

2 tablespoon chopped parsley

1/4 cup mayonnaise

2 tablespoon lemon juice

Method

1.Cook the pasta following the instructions on the packet. Drain and rinse under cold water.

2.Place the pasta, tuna, cherry tomatoes, cucumber, eggs and parsley in a bowl. Combine the mayonnaise and the lemon juice and gently stir through the pasta mixture.
