Tuna and green bean stuffed potatoes

This tasty stuffed potato dish is easy to make and packed full of goodness, making it the ideal quick weeknight dinner. Stuffed with sundried tomato and basil tuna with green beans and shredded cheese, it will satisfy your family in no time at all.

Ingredients

Method

1.Preheat oven to 220°C (200°C fan-forced). Line a baking tray with non-stick baking paper.
2.Cook potatoes in a large saucepan of boiling water for 8 minutes, until just tender. Drain, pat dry with paper towel. Place on prepared tray. Cook in oven for 15 minutes, until golden and crisp.
3.Meanwhile, steam green beans for 2-3 minutes, until just tender.
4.Place potatoes on plates, make a cross incision in top of each, then squeeze open. Fill each immediately with half of cheese, then top with beans, tuna and remaining cheese. Season to taste and serve.
