Tropical popsicles
- 2/3 cup sugar
- 3/4 cup water
- 800 gram piece seedless watermelon
- 2 tablespoon lemon or lime juice, plus 1 tablespoon extra
- 1 (1 kg) medium pineapple
- 1 tablespoon strained passsion fruit juice
Method
Tropical popsicles
- 1In a small saucepan, combine sugar water over moderate heat. Cook and stir 3 minutes or until sugar dissolves. Increase heat to high; bring to the boil. Boil, without stirring, 1 minute. Cool to room temperature.
- 2Peel and chop watermelon. Process watermelon until smooth. Press through a sieve into a jug or bowl; measure 1 cup juice to use. Combine watermelon juice with half the syrup and lemon juice; strain through a fine sieve or strainer. Pour into 8 x 1/3-cup popsicle or ice block moulds. Freeze 2 hours or until firm.
- 3Peel and chop pineapple. Process pineapple until smooth. Press through a sieve into a jug or bowl; measure 1 cup juice to use. Combine pineapple juice with remaining syrup, passionfruit juice and extra lemon juice to taste. Strain through fine sieve or strainer.
- 4Pour pineapple mixture into moulds; insert sticks. Freeze 2 hours or until popsicles are firm.
