  • 125 g unsalted butter, coarsely chopped
  • 1/3 cup firmly packed brown sugar
  • 2 tbsp honey
  • 1 1/2 cups rolled oats
  • 1/2 cup self-raising flour
  • 1 1/2 cups finely chopped dried tropical fruit
  • 1/3 cup desiccated coconut

  • 1
Preheat oven to 150°C. Grease a 20cm x 30cm slice pan; line base and long sides with baking paper, extending paper 5cm over sides.
  • 2
Stir butter, brown sugar and honey in a medium-sized saucepan over low heat for 2 minutes or until sugar dissolves.
  • 3
Stir in oats, flour, dried fruit and coconut. Press mixture firmly into pan; level surface.
  • 4
Bake for 40 minutes or until golden brown. Cool completely in pan to allow it to firm. Cut into slices.

Make up to four days ahead; store in an airtight container in the pantry. For a chewier result, reduce the cooking time, or for a crunchier version, increase it.
