Tropical oaty delight
Packed with delicious dried tropical fruit, this slice will remind you of sunshine. A little bit crispy and a little bit chewy, it's a delightful snack for lunchboxes or to pair with a cup of tea.

Ingredients
- 125 g unsalted butter, coarsely chopped
- 1/3 cup firmly packed brown sugar
- 2 tbsp honey
- 1 1/2 cups rolled oats
- 1/2 cup self-raising flour
- 1 1/2 cups finely chopped dried tropical fruit
- 1/3 cup desiccated coconut
Method
- 1Preheat oven to 150°C. Grease a 20cm x 30cm slice pan; line base and long sides with baking paper, extending paper 5cm over sides.
- 2Stir butter, brown sugar and honey in a medium-sized saucepan over low heat for 2 minutes or until sugar dissolves.
- 3Stir in oats, flour, dried fruit and coconut. Press mixture firmly into pan; level surface.
- 4Bake for 40 minutes or until golden brown. Cool completely in pan to allow it to firm. Cut into slices.
Notes
Make up to four days ahead; store in an airtight container in the pantry. For a chewier result, reduce the cooking time, or for a crunchier version, increase it.
