Packed with delicious dried tropical fruit, this slice will remind you of sunshine. A little bit crispy and a little bit chewy, it's a delightful snack for lunchboxes or to pair with a cup of tea.

Ingredients

Method

1.Preheat oven to 150°C. Grease a 20cm x 30cm slice pan; line base and long sides with baking paper, extending paper 5cm over sides.
2.Stir butter, brown sugar and honey in a medium-sized saucepan over low heat for 2 minutes or until sugar dissolves.
3.Stir in oats, flour, dried fruit and coconut. Press mixture firmly into pan; level surface.
4.Bake for 40 minutes or until golden brown. Cool completely in pan to allow it to firm. Cut into slices.

Make up to four days ahead; store in an airtight container in the pantry. For a chewier result, reduce the cooking time, or for a crunchier version, increase it.
