Triple chocolate cupcakes with beer
Say cheers with these rich triple chocolate cupcakes with beer. The addition of beer adds a new dimension of flavour.

Ingredients
Cupcakes
- 250 millilitre chocolate-flavoured stout beer
- 250 gram butter, cubed
- 3/4 cup cocoa
- 1 3/4 cup caster sugar
- 1/2 cup sour cream
- 2 eggs
- 1 tablespoon vanilla extract
- 2 1/4 cup plain flour
- 2 1/4 teaspoon baking soda
Frosting
- 250 millilitre chocolate-flavoured stout beer
- 1 tablespoon sugar
- 500 gram cream cheese, at room temperature
- 125 gram butter, softened
- 1 teaspoon vanilla extract
- 4 cup icing sugar
Ganache
- 250 gram dark chocolate
- 1/2 cup cream
Method
Cupcakes
- 1Preheat oven to 180°C. Line two 12-hole muffin tins with 18 cupcake cases.
- 2Place beer in a large saucepan and add butter. Heat over a medium heat until butter is melted, stirring occasionally. Whisk in cocoa and sugar.
- 3In a small bowl, beat together sour cream, eggs and vanilla extract, then pour into the beer mixture. Whisk in flour and baking soda.
- 4Two-thirds fill cupcake cases with the batter. Bake for 15-20 minutes or until cupcakes spring back when lightly touched. Cool in tins for 3 minutes before turning out onto a wire rack to cool completely.
Frosting
- 5To make the frosting, place beer and sugar in a small saucepan, then simmer gently until beer is reduced to about 3 tablespoons. It may seem to take ages to start reducing, but once it does it’ll happen in a hurry, so watch it carefully.
- 6Beat cream cheese and butter until light and fluffy. Add beer reduction and vanilla extract, then beat until smooth. Add icing sugar and beat again until light and fluffy. Chill for 1-2 hours before icing cupcakes.
Ganache
- 7Make the ganache by heating the chocolate and cream in a microwave in short bursts on high, or in a bowl over a pot of simmering water. Stir until combined and set aside to cool to room temperature.
- 8To assemble, pipe or slather a generous amount of frosting on top of cooled cupcakes and top with a spoonful of ganache.
