Method
1.Preheat oven to 160°C/140°C fan-forced. Line two large baking trays with baking paper.
2.Using an electric mixer, beat butter, sugar and essence in a small bowl until light and creamy. Add egg; beat until combined. Sift combined flours and cocoa powder over the butter mixture. Stir to combine. Stir in chocolate bits. Cover with plastic food wrap; chill for 15 minutes.
3.Roll heaped tablespoons of mixture into balls. Place on prepared trays, leaving room for spreading. Flatten slightly. Bake for 12 minutes. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely.
You can also add chopped nuts, such as walnuts or pecans. Store in an airtight container for up to four days.
