Ingredients
Trio of melon balls in ginger syrup
- 1/2 cup caster sugar
- 1/2 cup fresh orange juice
- 5 pieces orange peel
- 3 pieces fresh ginger, peeled, cut into matchsticks
- 1/4 seedless watermelon
- 1/2 honeydew melon
- 1/2 rockmelon
- 2 tablespoon small mint leaves
Method
Trio of melon balls in ginger syrup
- 1Combine sugar, juice, peel and ginger in a small saucepan. Cook and stir over moderate heat until sugar dissolves. Bring to the boil. Reduce heat to low; simmer, uncovered, for 5-7 minutes or until thickened slightly. Let cool slightly.
- 2Meanwhile, using a melon baller, scoop balls of watermelon, honeydew and rockmelon into a large bowl.
- 3Drizzle cooled ginger syrup over melon balls; stir to combine. Cover with plastic food wrap and chill for 1 hour or until ready to serve.
- 4Spoon fruit and syrup into serving dishes; top with mint.
Notes
The syrup is also good with banana and seedless grapes.
