Method
Cucumber and peanuts
1.Toss the cucumber, peanuts, oil and lime juice together.

2.For the dressing, whisk the juice, chilli, oil, vinegar and sugar together.
3.Toss the beans, onion and coconut together with the dressing. Make sure the vegetables are well dressed.
Pineapple, chilli and sesame
4.Cut the pineapple in half again, then thinly slice the fruit into leaves. Mix with the sesame seeds, chilli and a splash of vinegar.
All of these salads will benefit from sitting for at least 15 minutes before serving to allow the flavours to fully develop.
