Tomato pastry pizzas

Hearty and tomatoey mouthwatering pastry pizzas! Easy to prepare and quick to devour, these are the ultimate dinner for all the pizza lovers out there!

Ingredients

Tomato pastry pizzas
  • 2 sheets frozen butter puff pastry
  • 1 kilogram ripe roma tomatoes
  • 1 teaspoon sea salt flakes
  • 2 teaspoon fresh thyme leaves
  • 2 cup (200g) grated mozarella cheese
  • 1/3 cup (25g) grated parmesan cheese
  • 1/2 cup (60g) sicilian green olives, sliced finely
  • baby leaf salad, to serve

Method

    Preheat oven to 200°C (180°C fan-forced).

    Line two oven trays with baking paper. Place the frozen pastry sheet on one prepared tray. Stand a few minutes, then prick all over with a fork.

    Slice the tomatoes into 1cm-thick slices and place them onto one of the prepared trays. Sprinkle with the salt and thyme.

    Bake pastry and tomatoes for 15 minutes. Remove the pastry tray, cover with another piece of baking paper and then sit the tray of tomatoes on top of the baking paper. Return the double layered tray to the oven for a further 10 minutes.

    Remove the tray from the top of the pastry. Sprinkle pastry with the mozzarella. Arrange the cooked tomatoes over the mozzarella and sprinkle with the parmesan. Bake for a further 5 minutes or until cheese is melted. Cut pastry into four squares. Sprinkle with the sliced olives.

    Serve pizza with salad.
