Tomato, goat’s cheese and thyme quiches
1.Preheat oven to 180°C. Lightly grease 3 mini muffin trays.
2.Cut 36 circles from pastry using a 4cm round pastry cutter. Ease pastry into recesses. Place half a cherry tomato and a little goat’s cheese in each.
3.In a jug, whisk eggs, cream and parmesan together. Season to taste. Pour evenly among cases. Sprinkle with thyme.
4.Bake 12-15 minutes, until custard puffs and pastry is golden.
