Tomato and feta sticks

  • 24 cherry tomatoes
  • 24 basil leaves
  • 12 cubes of feta (approximately 70g)
  • olive oil for drizzling
  • juice of ½ lemon
  • 1/2 cup basil pesto

    Using small skewers, thread a tomato, followed by a basil leaf, a piece of feta, another basil leaf and finish with another tomato until all the ingredients are used up.

    Serve the skewers drizzled with the olive oil and a squeeze of the lemon juice accompanied by a bowl of basil pesto and toasted slices of bread.


  • To help slide the cheese onto the skewers, rub the skewers with a little olive oil.
