Tomato and chilli chicken (arrabbiata)

Arrabbiata is a spicy Italian sauce made from garlic, tomatoes, and red chilli cooked in olive oil. Wonderfully fragrant, we've served it here with tender pan-fried chicken and creamy polenta to create a quick and easy dinner dish in under 30 minutes.

Ingredients

Method

1.Remove excess fat from chicken; pat dry with paper towel.
2.Heat oil in a flameproof casserole pan on medium-high. Add chicken and garlic to pan. Fry 5 minutes, until chicken is browned all over.
3.Add wine; simmer 1 minute. Add tomato and chilli. Season to taste; bring to boil. Reduce heat to low. Cover and simmer gently, 6-8 minutes, until chicken is cooked. Serve with polenta, a scattering of parsley and a grinding of pepper.

You can leave the chilli out altogether to make this dish kid-friendly.
