Method

1.Place dried shiitake mushrooms in a small bowl. Cover with warm water; soak 10 minutes, until softened. Reserve liquid.
2.Meanwhile, place stock in a large saucepan on high heat. Bring to boil. Add tom yum paste; stir to combine. Reduce heat to low.
3.Add fresh and dried mushrooms, and reserved liquid. Simmer 5 minutes, until soup is reduced slightly.
4.Add remaining ingredients; simmer 1 minute, until heated through. Serve.
