Ingredients

Method

1.Wash and dry the apples, then remove the stalks and insert a lollipop stick into the base of each.
2.Place the sugar, water and glucose syrup in a saucepan and stir until sugar has completely dissolved.
3.Brush sugar crystals from the sides of the pan using a wet pastry brush.
4.Bring the sugar mixture to the boil, without stirring, and leave to cook for 15-20 mins until it reaches the “hard crack” stage on a sugar thermometer.
5.Stir in the red food colour, then wait for the bubbles to subside.
6.Tip the pan to one side and dip the apples in the toffee mixture,being sure to coat them evenly, dip immediately into a cold jug of water-this will set the toffee.
7.Place on prepared tray and leave to set.

Once the toffee apples are set, wrap in cellophane and give as take-home treats.
