Toasted raisin tea bread
- 1 1/3 cup (225g) raisins
- 1 1/2 cup (375ml) hot strong tea
- 3 tablespoon honey
- 1 3/4 cup (275g) self-raising wholemeal flour, sifted
- 1/2 teaspoon mixed spice
- 2 eggs, lightly beaten
- jam (optional), to serve
Method
Toasted raisin tea bread
- 1In a large bowl, soak raisins in hot tea with honey for 30 minutes, until softened.
- 2Preheat oven to 180°C. Grease a 14cm x 21cm loaf pan.
- 3Fold flour and mixed spice into raisin mixture. Add eggs. Pour into prepared pan. Bake for 1 hour 10 minutes, until a skewer inserted comes out clean.
- 4Cool on a wire rack before cutting into slices.
- 5Serve with jam.
