Toasted raisin tea bread
  • 1 1/3 cup (225g) raisins
  • 1 1/2 cup (375ml) hot strong tea
  • 3 tablespoon honey
  • 1 3/4 cup (275g) self-raising wholemeal flour, sifted
  • 1/2 teaspoon mixed spice
  • 2 eggs, lightly beaten
  • jam (optional), to serve

Toasted raisin tea bread

    In a large bowl, soak raisins in hot tea with honey for 30 minutes, until softened.

    Preheat oven to 180°C. Grease a 14cm x 21cm loaf pan.

    Fold flour and mixed spice into raisin mixture. Add eggs. Pour into prepared pan. Bake for 1 hour 10 minutes, until a skewer inserted comes out clean.

    Cool on a wire rack before cutting into slices.

    Serve with jam.
