Ingredients

Toasted mini muesli bars
  • 150 gram reduced-fat dairy-free spread
  • 1/4 cup golden syrup
  • 1/2 cup firmly packed brown sugar
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon hot water
  • 1 1/2 cup plain flour
  • 1/2 cup shredded coconut
  • 1/4 cup dried sweetened cranberries
  • 1/4 cup pepitas
  • 1 1/2 cup toasted muesli

Method

    Preheat oven to moderate, 180°C (160°C fan-forced). Line 2 baking trays with baking paper.

    Melt spread and golden syrup in a saucepan over low heat. Remove from heat. Add sugar; stir until dissolved.

    Dissolve bicarbonate of soda in hot water. Add to saucepan; stir (mixture will froth). Add flour, coconut, cranberries, pepitas and muesli; stir to combine.

    Place level tablespoons of mixture on prepared trays, 4cm apart, to allow for spreading.

    Bake, swapping trays halfway through cooking, 18-20 minutes, or until golden. Transfer to wire racks to cool. Serve.

Notes

We used an oval measuring spoon to shape mixture.
