Method

Tropical fruit layer

1.Place crushed pineapple, coconut water, coconut cream and mashed banana in a saucepan and bring to a gentle simmer.
2.Add a dash of cold water to the custard powder and mix to a loose paste. Trickle the custard mixture into the simmering fruit and stir until thickened. Set aside to cool.

Crumb layer

3.While the fruit is cooling, place the digestives into a blender or processor with the melted butter and blitz to form crumbs.

To serve

4.Layer some crumbs into 4-6 serving glasses followed by some of the cooled tropical fruit compote. Repeat with remaining crumbs and compote, top with whipped cream and a sprinkle of toasted coconut flakes. Serve Tim Tam Pina Colada biscuits on the side.
