Ingredients

Lemon chilli crumbs
  • 25 gram butter
  • 1 tablespoon finely grated lemon rind
  • 1 cup (25g) stale breadcrumbs
  • 1/4 teaspoon chilli powder

  • 150 gram green beans, trimmed
  • 150 gram yellow beans, trimmed
  • 300 gram frozen broad beans
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice

Method

    To make lemon chilli crumbs, melt butter in small frying pan. Cook remaining ingredients over low heat, stirring, until crumbs are browned.

    Boil, steam or microwave green, yellow and broad beans separately until tender. Drain and rinse under cold water; drain again. Peel away grey outer shells from broad beans.

    Place all beans in medium bowl with oil and juice; toss gently to combine. Season to taste and sprinkle with crumbs.
