The best apple fritters
Dusted with plenty of cinnamon sugar, Nici Wickes's apple fritters are gluten-free and absolutely heavenly!

Ingredients
- 75 gram gluten-free flour, use one with plenty of rice flour in it
- 1/2 teaspoon baking powder
- 1/4 cup apple cider vinegar
- iced water to thin the batter
- 2 teaspoon cinnamon
- 1/2 cup caster sugar
- 2 Granny Smith apples
- grapeseed oil, for frying
Method
- 1In a bowl, mix the flour and baking powder. Add the cider vinegar and enough iced water (start with ¼ cup) to make a smooth, thick batter (more of a paste). Set aside for 15 minutes while you prepare the apples.
- 2Mix the cinnamon and sugar in a deep bowl.
- 3Peel and slice each apple into 4-5 slices.
- 4Heat enough oil in a small saucepan to deep-fry. Add a small drop of batter and when it is golden, the oil is hot enough.
- 5Dip each apple slice in the batter (spread it over with a spoon if you need to) and gently lower into the hot oil. Cook until golden brown. Shake off the excess oil and drop into the sugar/cinnamon bowl, tossing to coat. Repeat with all slices.
- 6Keep warm in the oven or eat immediately!
Notes
- Coring the apples isn’t necessary in this recipe, but if you fancy fritters with a hole in them, feel free!
