Ingredients

  • 75 gram gluten-free flour, use one with plenty of rice flour in it
  • 1/2 teaspoon baking powder
  • 1/4 cup apple cider vinegar
  • iced water to thin the batter
  • 2 teaspoon cinnamon
  • 1/2 cup caster sugar
  • 2 Granny Smith apples
  • grapeseed oil, for frying

Method

  • 1
In a bowl, mix the flour and baking powder. Add the cider vinegar and enough iced water (start with ¼ cup) to make a smooth, thick batter (more of a paste). Set aside for 15 minutes while you prepare the apples.
  • 2
Mix the cinnamon and sugar in a deep bowl.
  • 3
Peel and slice each apple into 4-5 slices.
  • 4
Heat enough oil in a small saucepan to deep-fry. Add a small drop of batter and when it is golden, the oil is hot enough.
  • 5
Dip each apple slice in the batter (spread it over with a spoon if you need to) and gently lower into the hot oil. Cook until golden brown. Shake off the excess oil and drop into the sugar/cinnamon bowl, tossing to coat. Repeat with all slices.
  • 6
Keep warm in the oven or eat immediately!

Notes

  • Coring the apples isn’t necessary in this recipe, but if you fancy fritters with a hole in them, feel free!
