Thai-style pork salad with fresh herbs and lime

Spicy ground meat salads, sometimes called “larb”, are common in Thailand. Try Nici Wickes' easy pork mince salad recipe that's bursting with flavour from the amount of fresh herbs and lime juice

Method

1.In a bowl, combine the mince, flour, onion, chillies, lemongrass, fish sauce, soy sauce and coriander. Cover and refrigerate for 1 hour.
2.Heat the oil in a frying pan. Add the mince mixture and cook over high heat until it is golden brown. Add the lime juice. Set aside to cool slightly.
3.Combine the mince with the tomatoes, cucumber, coriander, lime leaves and mint.
4.To serve, place the buttercruch lettuce leaves on a board or platter and top each with the mince mixture. Garnish with the extra lime wedges and fresh herbs.
  • Feel free to use chicken mix or chunks of flour-dusted fresh fish instead of pork mince.
